The slow cooker is a godsend! As is the rice cooker, which I plan on using tonight. (Brown rice takes long enough to cook that I can steam-cook boneless chicken in the basket on top, with some veggies.) The trick sometimes is just the timing: having the right ingredients on hand, and being at home 4-7 hours before I want to eat. Which happens... most days.
But, gosh, I love my slow cooker so much. Especially if I can just dump some meat in with a bagged sauce and call it a good day.
Are there any particular recipes you like for slow-cooking? I have a little cooker, as is appropriate for one person, but a decent recipe usually gives me 1-4 meals of leftovers on top of its dinner portion. Especially when I do pork, which turns into endless pork sandwiches.
